Fluffy Pancakes

Delicious and airy fluffy pancakes, perfect for breakfast or brunch that are incredibly quick and easy to make.

  • 1 1/2 cups All-Purpose Flour
  • 2 tablespoons Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 Large Egg
  • 1 1/4 cups Milk
  • 2 tablespoons Unsalted Butter (melted)
  • 1 teaspoon Vanilla Extract

Instructions

  1. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until well combined.
  2. In a medium bowl, lightly beat the egg. Add the milk, melted butter, and vanilla extract, mixing until just combined.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Using a spatula, gently fold them together. Keep the batter lumpy to achieve fluffiness!
  4. Let the batter rest for about 5-10 minutes.
  5. Preheat a lightly buttered griddle or non-stick skillet over medium heat. Once hot, pour 1/4 cup of batter onto the surface.
  6. Cook for 2-3 minutes on one side. Once bubbles form on the surface, flip and cook the other side for an additional 2-3 minutes until golden brown.
  7. Serve warm with your favorite toppings!

Notes

For a dairy-free option, substitute almond milk. You can also use whole wheat flour for a healthier twist.
