Fluffy Pancakes

Delicious and light fluffy pancakes that are perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter plus more for cooking
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract (if you’re using it) until well combined.
  3. Gradually fold the wet ingredients into the dry mixture. Be careful not to overmix; it’s alright if there are a few lumps.
  4. Preheat your griddle over medium heat, adding a bit of butter to coat the surface.
  5. For each pancake, pour 1/4 cup of batter onto the griddle. Wait for bubbles to form on the surface before flipping.
  6. Once they turn golden brown on both sides, serve these pancakes warm, topped with your favorite toppings.

Notes

Don’t overmix your batter; lumps are perfectly fine! Experiment with different toppings and flavors for variety.
