Fluffy Scrambled Pancake Bites

  • 2 tablespoons Granulated Sugar (optional)
  • 1 teaspoon Baking Powder
  • 0.5 teaspoon Baking Soda
  • a pinch Fine Salt
  • 2 large Eggs
  • 0.75 cup Milk
  • 0.5 cup Plain Yogurt or Sour Cream
  • 2 tablespoons Unsalted Butter (melted)
  • 1 teaspoon Vanilla Extract (optional)

Instructions

  1. Whisk together the flour, sugar (if using), baking powder, baking soda, and salt in a large bowl until well combined.
  2. Beat the eggs in another bowl, then add the milk, yogurt, melted butter, and vanilla extract. Mix until smooth.
  3. Pour the wet ingredients into the dry mixture. Stir gently until just combined; small lumps are totally fine!
  4. Preheat a non-stick skillet over medium heat and lightly grease the surface.
  5. Spoon small dollops of batter into the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Repeat with the remaining batter, and serve warm with your favorite toppings.

Notes

For the fluffiest results, ensure your baking powder and baking soda are fresh. Avoid over-mixing the batter and let it rest for a few minutes before cooking.
