4 oz cream cheese, softened
1 tsp vanilla extract
2 tbsp powdered sugar
4 large eggs, at room temperature
1 cup whole milk or half-and-half (dairy-free milk optional)
2 tbsp granulated sugar
1 tsp ground cinnamon
Pinch of salt
Fresh strawberries, hulled and sliced (about 4-5 thin slices per bread slice)
1 tbsp unsalted butter (for cooking)

Instructions
Create the creamy filling: In a medium bowl, combine the ricotta, softened cream cheese, vanilla extract, and powdered sugar. Blend until smooth; if you desire a creamier consistency, add a splash of milk.
Slice and stuff the bread: Take a paring knife and carefully cut a pocket into each slice of bread—ensure you don’t cut all the way through. Stuff each pocket with about 2 tablespoons of the creamy filling along with a few strawberry slices. Gently press the bread to close it.
Whip up the custard batter: In a large bowl, whisk together the eggs, milk or half-and-half, granulated sugar, cinnamon, vanilla extract, and a pinch of salt until well combined.
Soak the stuffed bread: Heat a non-stick skillet over medium heat and melt the butter to coat the pan. Dip each stuffed slice into the custard batter for about 15-20 seconds per side. Take care not to soak for too long to maintain the shape of the bread.
Cook the French toast: Place the soaked slices in the skillet and cook for 3-4 minutes on each side until they turn golden and slightly crispy. Add more butter as needed to keep the surface slick. The filling inside should be warm and just a little melty.
