  • 1 tablespoon baking powder
  • 1 tablespoon sugar

  • 1 cup milk
  • 1 large egg

  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, combine the mashed sweet potatoes, flour, baking powder, sugar, and salt. Mix these dry ingredients until they are well blended.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  3. Gently pour the wet mixture into the dry ingredients, stirring carefully. Avoid overmixing—all those lumps you see are welcome!
  4. Heat a skillet over medium heat and lightly coat it with cooking spray or a bit of butter.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface, then flip each pancake, cooking until they are golden brown on both sides.
  6. Serve warm, adding your favorite toppings like maple syrup, fresh fruit, or a dollop of yogurt.

Notes

For fluffier pancakes, ensure you’re not overmixing the batter; a few lumps are perfectly fine. Consider adding spices for extra flavor.
