Freezer Breakfast Burritos

Delicious and hearty breakfast burritos filled with eggs, sausage, and cheese, perfect for busy mornings.

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Pour in the egg mixture and cook, stirring occasionally, until the eggs are just set but still moist (about 5 minutes).
  4. Remove the eggs from the skillet and set them aside.
  5. Warm the tortillas slightly in the microwave or on the skillet to make them easier to handle.
  6. Lay out each tortilla and fill it with scrambled eggs, crumbled sausage, and both types of cheese.
  7. Fold in the sides of the tortillas and roll them tightly to create burritos.
  8. Wrap each burrito individually in plastic wrap and then in aluminum foil.
  9. Place the wrapped burritos in a freezer-safe bag or container and freeze for up to 3 months.
  10. To reheat, unwrap from the foil and plastic wrap, wrap in a damp paper towel, and microwave on high for 1-2 minutes or until heated through.

Notes

Feel free to swap the cheeses for your favorites or use a plant-based sausage for a vegetarian alternative. Store wrapped burritos in a labeled freezer-safe bag or container.
