Freezer Breakfast Burritos

Delicious and easy-to-make breakfast burritos that can be prepared in advance and frozen for quick morning meals.

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Whisk together the eggs, milk, salt, and pepper in a large bowl until smooth.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet and stir occasionally until the eggs are set but still slightly moist. Remove from heat and set aside.
  4. Warm the tortillas in the microwave for about 30 seconds to make them pliable.
  5. Lay each tortilla flat and top with a portion of scrambled eggs, crumbled sausage, and a sprinkle of cheddar and Monterey Jack cheese.
  6. Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
  7. Wrap each burrito individually in plastic wrap, followed by aluminum foil to lock in freshness.
  8. Place the wrapped burritos in a freezer-safe bag or container. They can be frozen for up to 3 months.
  9. To reheat, remove the foil and plastic wrap, wrap the burrito in a damp paper towel, and microwave on high for 1-2 minutes, or until warmed through.

Notes

For a healthier version, substitute low-fat cheese or egg whites. Add vegetables like bell peppers or spinach for extra nutrition.
