Freezer Breakfast Burritos

Convenient and delicious breakfast burritos filled with eggs, sausage, and cheese, perfect for busy mornings.

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk the eggs, milk, salt, and pepper together until well combined.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet. Cook, stirring occasionally for about 4-5 minutes, until the eggs are set but still moist. Remove from heat and set aside.
  4. Warm the tortillas slightly to make them pliable.
  5. On each tortilla, layer a portion of the scrambled eggs, followed by the crumbled sausage and a sprinkle of both cheeses.
  6. Fold the sides of each tortilla in, then roll from the bottom to form tight burritos.
  7. Wrap each burrito tightly in plastic wrap and then in aluminum foil for protection.
  8. Place the wrapped burritos in a freezer-safe bag or container. They can be frozen for up to 3 months.
  9. To reheat, remove the foil and plastic wrap, wrap the burrito in a damp paper towel, and microwave on high for 1-2 minutes, or until heated through.

Notes

Feel free to swap out the sausage for turkey sausage or veggie alternatives to fit your dietary preferences. Serve with salsa, guacamole, or sour cream.
