Freezer Breakfast Sandwiches

Delicious and easy breakfast sandwiches perfect for busy mornings, made with eggs, cheese, and your choice of meat, ready to be frozen and reheated.

  • 12 eggs
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 12 slices cooked bacon or sausage patties or ham
  • 12 English muffins
  • 12 slices cheddar cheese

Instructions

  1. Preheat your oven to 325°F (163°C) and generously grease a 9×13-inch pan to prevent sticking.
  2. Whisk together the eggs, milk, salt, and pepper until well combined.
  3. Pour the egg mixture into the prepared pan, spreading it evenly.
  4. Bake for 18-22 minutes, or until the center is just set.
  5. Allow the baked eggs to cool for a few minutes before cutting them into 12 equal squares.
  6. Assemble each English muffin by placing a square of egg, a slice of cheese, and your choice of meat between the halves.
  7. Heat the sandwiches in a 350°F (175°C) oven for about 5 minutes or until the cheese melts if serving immediately.
  8. Wrap each sandwich tightly in foil or plastic wrap to freeze.
  9. Reheat by unwrapping and baking in the oven at 350°F for about 15-20 minutes or microwave for 1-2 minutes.

Notes

Store the sandwiches tightly wrapped in the freezer for up to three months. For a healthier version, use whole wheat English muffins.
