Gluten-Free Almond Flour Brownies

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar or sweetener of choice
  • 1/4 cup melted butter or coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing it or lining it with parchment paper.
  2. In a mixing bowl, combine the almond flour, cocoa powder, sugar, and baking powder. Stir until well mixed.
  3. In another bowl, whisk together the melted butter (or coconut oil), eggs, vanilla extract, and salt until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until you achieve a uniform batter.
  5. Transfer the batter into your prepared baking pan, spreading it evenly.
  6. Bake in the oven for 20-25 minutes and check for doneness with a toothpick.
  7. Allow the brownies to cool in the pan before cutting into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Freeze for up to three months.
