Grab & Go Make Ahead Breakfast Bowls

A hearty breakfast that combines scrambled eggs, savory ham, and crispy hash browns for a nutritious start to your day.

  • 12-15 eggs
  • 2 tbsp butter
  • 2 tbsp cream
  • 4 tbsp canola oil
  • 1 large green pepper (seeded & diced)
  • 1 small yellow onion (peeled & diced)
  • 1 pkg refrigerated diced hash brown potatoes
  • 1 cup chopped ham
  • 1 1/2 cup shredded cheddar cheese

Instructions

  1. Begin by melting the butter in a large skillet over medium heat.
  2. Crack the eggs into a mixing bowl, add the cream, and whisk until smooth.
  3. Pour the egg mixture into the skillet. Cook on low heat, stirring occasionally, until the eggs are slightly underdone. Then remove from heat and transfer to a plate.
  4. In the same skillet, add the canola oil and heat it.
  5. Add the hash browns to the skillet and cook for 5 minutes. Flip them and cook for another 5 minutes until golden brown.
  6. Stir in the diced green pepper, onion, and chopped ham. Cook for an additional 5-10 minutes, stirring as necessary.
  7. Finally, mix the scrambled eggs back into the skillet until everything is well combined.

Notes

For fluffier scrambled eggs, consider whisking in a splash of water instead of cream. Serve with optional toppings like fresh avocado, salsa, or sour cream.
