Greek Yogurt Pancakes

Delightful pancakes made with Greek yogurt for a fluffy texture and a hint of tanginess.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup Greek yogurt
  • ¼ cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. Combine the flour, sugar, baking powder, and salt in a small bowl.
  2. Whisk together the Greek yogurt, milk, eggs, vanilla extract, and melted butter in a medium bowl until smooth.
  3. Gradually add the dry ingredients to the wet mixture and mix gently until just combined.
  4. Preheat a large nonstick skillet over medium heat and lightly grease it.
  5. Pour ¼ cup of pancake batter onto the skillet and cook for about 2 minutes until bubbles form on the surface.
  6. Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  7. Repeat the process with the remaining batter.
  8. Serve warm with butter, maple syrup, or your favorite toppings.

Notes

Avoid overmixing; a few lumps are okay to keep pancakes light and fluffy. You can swap all-purpose flour for whole wheat for a healthier option.
