Healthy Banana Oatmeal Muffins

Delightful banana oatmeal muffins that are healthy, easy to make, and kid-approved.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth in a large bowl.
  3. Add the rolled oats, milk, and your choice of honey or maple syrup to the mashed bananas. Mix well until fully combined.
  4. Sprinkle in the baking powder, baking soda, cinnamon, and salt. Stir until everything is well mixed.
  5. Fold in walnuts or chocolate chips for added texture and flavor, if desired.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes, or until a toothpick comes out clean when inserted into the center of a muffin.
  8. Allow the muffins to cool for a few minutes before carefully removing them from the tin.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. These muffins can be frozen for longer storage.
