Healthy Blueberry Breakfast Baked Oatmeal

  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup blueberries
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup applesauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, almond milk, maple syrup, vanilla extract, baking powder, and cinnamon. Mix thoroughly.
  3. Gently fold in the blueberries and chopped nuts if you’re using them.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Bake for 30-35 minutes or until the top is set and lightly golden.
  6. Allow the oatmeal to cool slightly before slicing. Serve warm or refrigerate for meal prep throughout the week.

Notes

Store leftovers in an airtight container for up to five days. Reheat in the microwave or oven until warmed through.
