Healthy Chocolate Chip Greek Yogurt Muffins

Delicious muffins packed with protein from Greek yogurt and sweet chocolate chips, perfect for breakfast or snacks.

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup Greek yogurt
  • ¼ cup neutral oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips
  • ½ cup milk

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt until fluffy in a large bowl.
  3. Blend together the Greek yogurt, oil (or melted butter), eggs, milk, and vanilla extract until smooth in a separate bowl.
  4. Pour the wet ingredients into the dry mixture, folding them together gently until just combined.
  5. Fold in the chocolate chips, reserving a small handful for topping.
  6. Distribute the muffin batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 18-20 minutes, or until the tops are set and a toothpick inserted comes out mostly clean.
  8. Allow the muffins to cool slightly in the tin before indulging!

Notes

These muffins can be enjoyed warm, with coffee or milk. Store leftovers in an airtight container for up to three days or freeze for longer storage.
