  • 1 cup diced fresh strawberries
  • 1/4 cup maple syrup or honey
  • 1/4 cup almond butter or peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking dish by lining it with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, baking powder, and salt.
  3. In another bowl, mix the almond butter, maple syrup, and vanilla extract until it becomes a smooth blend.
  4. Pour the wet mixture into the dry ingredients. Stir until fully combined.
  5. Gently fold in the diced strawberries, ensuring they’re evenly distributed throughout the mixture.
  6. Transfer the mixture to your prepared baking dish, spreading it out evenly.
  7. Bake for 20-25 minutes, or until the top turns golden brown and the mixture sets.
  8. Let the bars cool completely before cutting them into squares. Enjoy!
