Instructions

  1. Peel and grate the sweet potatoes, squeezing out any excess moisture with a clean kitchen towel.
  2. In a skillet over medium heat, heat the olive oil. Add the diced onions and sauté for about 3-4 minutes until they become translucent and tender.
  3. Stir in the grated sweet potatoes, seasoning with salt, pepper, and any additional spices you choose.
  4. Let the mixture cook for about 5-7 minutes until the bottom turns golden brown. Carefully flip to cook the other side until crispy.
  5. Remove from skillet and serve immediately, garnished with fresh herbs if desired.
