  • 1 cup Spinach
  • 1 Bell pepper, diced
  • 1 Onion, chopped
  • 1/4 cup Cheese (optional)
  • 1 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your pan over medium heat and pour in a splash of olive oil.
  2. Add chopped onions and bell peppers. Sauté until they soften—about 3-4 minutes.
  3. Toss in the spinach. Let it wilt down for just one minute.
  4. In a bowl, whisk together your eggs with a pinch of salt and pepper.
  5. Pour the eggs over the cooked veggies, stirring gently to combine.
  6. If you want to include cheese, sprinkle some on top and let it melt as the eggs cook.
  7. Cook until the eggs are set to your liking, then serve immediately.
