A versatile and comforting breakfast featuring pancakes, scrambled eggs, and vibrant vegetables.

  • 2 cups pancake mix
  • 1 cup milk
  • 4 eggs
  • 1 cup flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mixed vegetables (bell peppers, spinach, etc.)
  • 1 cup cheese (optional)
  • 1 cup breakfast meats (bacon, sausage, etc.)
  • 1 cup fruits (bananas, berries, etc.)
  • 1 cup oats
  • 1 cup yogurt

Instructions

  1. Combine the pancake mix ingredients in a mixing bowl for a solid base.
  2. Add milk and eggs to the mix and stir until the batter is smooth.
  3. Preheat your skillet over medium heat, pour the batter to form pancakes, and cook until both sides are golden brown.
  4. Whisk the eggs in a separate bowl and scramble them in another skillet until cooked.
  5. Mix oats, milk, and yogurt for overnight oats and refrigerate overnight.
  6. Assemble breakfast bowls with scrambled eggs, sautéed vegetables, and breakfast meats.
  7. Top with sliced fruits or favorite toppings for extra flavor.
