High-Protein Breakfast Burrito

A satisfying and protein-packed breakfast burrito perfect for busy mornings or meal prep.

  • 1 breakfast sausage
  • 4 large eggs
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • 4 large tortillas
  • Salt and pepper to taste
  • Cooking oil or spray

Instructions

  1. Heat your skillet over medium heat and add a splash of cooking oil.
  2. Add the breakfast sausage and cook until browned. Set aside.
  3. Crack the eggs into the skillet and scramble until fully cooked, seasoning with salt and pepper to taste.
  4. Toss in the drained black beans along with the cooked sausage and mix well.
  5. Warm the tortillas in a pan or microwave until pliable.
  6. Spoon a generous portion of the egg mixture onto each tortilla and sprinkle with shredded cheese.
  7. Roll each tortilla tightly, ensuring the filling stays intact.
  8. For meal prep, wrap each burrito in foil or plastic wrap and store in a freezer bag.
  9. To eat, microwave the burrito for a few minutes until heated through.

Notes

For fluffier eggs, whisk with milk before cooking. Use fresh tortillas for best flavor.
