High Protein Cottage Cheese Blueberry Muffins

  • 1 cup blueberries
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Blend together the cottage cheese, eggs, honey (or maple syrup), and vanilla extract until the mixture is smooth.
  3. Whisk together the oats, baking powder, baking soda, and salt in a separate bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the blueberries, taking care to maintain their shape.
  6. Pour the batter into the lined muffin tin, filling each cup about two-thirds full to allow for rising.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool slightly before serving.

Notes

For a vegan option, substitute honey with maple syrup. Use Greek yogurt in place of cottage cheese for different flavor.
