High-Protein Cottage Cheese Egg Bake

A delightful, savory egg bake packed with high protein and colorful veggies, perfect for breakfast or brunch.

  • 12 large eggs
  • 16 ounces full-fat cottage cheese
  • 1 large red bell pepper – diced
  • 1/2 cup diced yellow onion
  • 4 cups chopped spinach
  • 1/4 cup shredded gruyere or gouda cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly coat a 9×13 baking pan with cooking spray.
  3. Spread the diced bell pepper, yellow onion, and chopped spinach in the baking dish.
  4. Whisk the eggs in a large bowl until well beaten and frothy.
  5. Stir in the cottage cheese, garlic, Italian seasoning, kosher salt, black pepper, and 1/4 cup of shredded gouda cheese.
  6. Pour the egg mixture over the vegetable layer in the baking dish.
  7. Sprinkle the remaining shredded cheddar cheese on top.
  8. Bake for about 50-55 minutes, or until the center is set and the top is lightly golden.
  9. Allow the bake to cool for 15 minutes before slicing and serving.

Notes

Store leftovers in an airtight container for up to four days. Reheat in the oven or microwave.
