High-Protein Freezer Breakfast Burritos

Quick and nutritious breakfast burritos packed with scrambled eggs, lean ground beef, veggies, and cheddar cheese, ideal for busy mornings and meal prep.

  • 8 large flour tortillas
  • 8 eggs
  • 1 pound lean ground beef
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 tablespoons chopped fresh parsley or cilantro (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a skillet over medium heat, brown the ground beef until it’s fully cooked. Drain excess fat and season with salt and black pepper.
  2. In a separate nonstick pan, scramble the eggs over medium-low heat until they are fluffy and cooked through.
  3. Using the same skillet from cooking the beef, add the diced red bell pepper and onion, and sauté until softened.
  4. Lay out the tortillas. Evenly divide the scrambled eggs, cooked ground beef, sautéed veggies, cheddar cheese, and optional herbs among them.
  5. Fold the sides of each tortilla inward and roll tightly to form burritos.
  6. Wrap each burrito in parchment paper and then in foil, or place them into freezer-safe bags.
  7. Freeze the burritos for up to three months. To reheat, microwave for 2–3 minutes or bake in the oven at 375°F for 20–25 minutes until heated through.

Notes

Customize your burritos with different proteins or vegetables. Best served with avocado, fruit salad, or salsa.
