High Protein Ground Turkey Casserole

A comforting and nutritious ground turkey casserole that’s easy to make, perfect for busy weeknights.

  • 1 lb ground turkey (lean)
  • 4 oz cream cheese, softened
  • 5 oz fresh spinach, chopped or whole
  • 1 cup cheddar cheese, freshly shredded
  • 1 egg
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Black pepper, to taste
  • Optional: ½ cup diced red bell peppers
  • Optional: ¼ cup plain Greek yogurt
  • Optional: mozzarella instead of cheddar

Instructions

  1. Preheat your oven to 375°F and grease a 9×9 baking dish.
  2. Cook the ground turkey over medium heat for 6–8 minutes. Break it up as it cooks until browned and no longer pink.
  3. Stir in garlic powder, salt, and black pepper. Toss in the spinach and cook until wilted, about 2–3 minutes.
  4. Lower the heat and mix in the softened cream cheese, stirring until melted and blended well.
  5. Let the mixture cool for 5 minutes, then add the beaten egg and ½ cup of cheddar cheese.
  6. Transfer the mixture to your prepared baking dish, topping with the remaining cheddar.
  7. Bake uncovered for 20–25 minutes, or until the top is bubbly and golden.
  8. Allow the casserole to rest for 10 minutes before slicing and serving.

Notes

Serve with a fresh green salad or crusty bread for a balanced meal. Great for meal prep and leftovers.
