High-Protein Lemon Blueberry Breakfast Bake

A delightful breakfast bake combining lemon and blueberry with oats and cottage cheese, packed with protein for a nutritious start to your day.

  • 1 cup oats
  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 1/2 cup blueberries
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 lemon, zest and juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your favorite baking dish.
  2. Mix together oats, cottage cheese, mashed bananas, blueberries, eggs, honey or maple syrup, lemon zest, lemon juice, vanilla extract, baking powder, and a pinch of salt until everything is well-blended.
  3. Pour the mixture into the prepared baking dish and spread it out evenly.
  4. Bake for about 25-30 minutes or until the top is golden and feels firm to the touch.
  5. Allow to cool slightly before slicing into portioned squares. Serve warm or store in the fridge for meal prep.

Notes

For a creamier texture, ensure your cottage cheese is well-mixed. This bake can be frozen in portions; reheat straight from the freezer.
