High Protein McGriddle Bites

A delightful twist on the classic breakfast sandwich, these High Protein McGriddle Bites combine savory breakfast sausage, protein pancake mix, and sugar-free maple syrup for a delicious and convenient meal.

  • 1 lb breakfast sausage, fully cooked and cooled
  • 2 cups protein pancake mix
  • 1.5 cups water
  • 1/4 cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the protein pancake mix and water in a large mixing bowl according to package instructions; adjust the water for desired batter consistency.
  3. Stir in the fully cooked and cooled breakfast sausage along with the shredded cheddar cheese until well mixed.
  4. Fold in the sugar-free maple syrup until fully combined.
  5. Grease a baking dish and spoon the mixture evenly into it.
  6. Bake for 20-25 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  7. Let the bites cool slightly before cutting them into bite-sized pieces.

Notes

For a kick, consider using pepper jack cheese instead of cheddar. Store leftovers in an airtight container in the refrigerator for up to 4 days.
