High Protein Triple Berry Bake

A delightful high-protein bake packed with vibrant flavors, perfect for breakfast or a nutritious snack.

  • 2 cups Full-Fat Cottage Cheese
  • 3 large Eggs
  • ½ cup Almond Flour
  • ¼ cup Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Baking Powder
  • 2 cups Mixed Berries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 or 9×9-inch baking dish.
  2. Combine the cottage cheese and eggs in a blender. Blend until smooth and creamy.
  3. Transfer the blended mixture to a mixing bowl.
  4. Add the almond flour, honey or maple syrup, vanilla extract, lemon zest, and baking powder. Mix until well combined.
  5. Fold in the mixed berries, ensuring they are evenly distributed.
  6. Pour the batter into the prepared baking dish and spread it out evenly.
  7. Bake in the preheated oven for 35–40 minutes, or until golden brown and set in the center.
  8. Allow to cool for 20–30 minutes before slicing into squares.

Notes

Best enjoyed warm or cold. Can be topped with Greek yogurt or a drizzle of honey. Lasts up to 4 days in the refrigerator.
