Homemade Freezable Breakfast Burritos

  • 8 large flour tortillas
  • 1 pound of breakfast sausage (or plant-based alternative)
  • 8 large eggs
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Optional: hot sauce or salsa for serving

Instructions

  1. In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain any excess fat and set aside.
  2. In the same skillet, sauté the diced bell pepper and onion for about 3-4 minutes until tender.
  3. In a bowl, whisk together the eggs, salt, and pepper. Pour the mixture into the skillet with the veggies. Cook until the eggs are just set, stirring occasionally.
  4. Lay out the tortillas and evenly distribute the cooked sausage, scrambled eggs, and cheese on each tortilla.
  5. Fold in the sides of each tortilla and roll tightly from the bottom up, sealing them well.
  6. Place the burritos on a baking sheet lined with parchment paper and flash freeze for about an hour.
  7. Once frozen, wrap each burrito tightly in foil or plastic wrap, then store them in a freezer-safe bag.
  8. To reheat, remove from the freezer, unwrap, and microwave for 2-3 minutes or heat in the oven at 350°F (175°C) for 20-25 minutes until warmed through.

Notes

For perfectly cooked scrambled eggs, avoid overcooking them—remove them from the heat while just set for soft, creamy eggs. These burritos can be stored in the freezer for up to 3 months.
