Mediterranean Breakfast Bowls

A colorful and nutritious Mediterranean breakfast bowl featuring eggs, feta, and fresh vegetables, perfect for busy mornings or leisurely brunches.

  • 1.5 tsp olive oil
  • 2 large eggs
  • 4 tbsp feta cheese, crumbled
  • 1 handful kalamata olives, pitted
  • 1/2 bell pepper, diced
  • 1/2 scallion, thinly sliced
  • 1 tbsp fresh basil, chopped
  • Black pepper to taste

Instructions

  1. Heat 1.5 teaspoons of olive oil in a skillet over medium heat until it shimmers.
  2. Add the diced bell pepper and sauté for about 2-3 minutes until it softens.
  3. Crack the eggs directly into the skillet and gently stir them to scramble together with the peppers.
  4. Season with black pepper to taste and continue cooking until the eggs are just set but still creamy.
  5. Stir in the crumbled feta cheese, kalamata olives, sliced scallions, and fresh basil.
  6. Remove from heat and serve warm in bowls. If desired, garnish with extra herbs or a drizzle of olive oil.

Notes

Feel free to swap in different vegetables like spinach or sun-dried tomatoes, or try goat cheese for a tangy twist. Fresh herbs enhance the flavor!
