Hot Honey Chicken Biscuits

  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 3/4 cup buttermilk
  • 2 large boneless, skinless chicken breasts
  • 1 cup buttermilk (for marinating)
  • 1 cup hot honey sauce
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Marinate the Chicken: Start by placing the chicken breasts in a bowl. Soak them in 1 cup of buttermilk for at least 1 hour.
  2. Preheat the Oven: Set your oven to 425°F (220°C).
  3. Make the Biscuit Dough: In a mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter until it looks like coarse crumbs. Gradually mix in 3/4 cup of buttermilk.
  4. Shape the Biscuits: Transfer the dough onto a floured surface. Gently knead it, then roll it out to about 1 inch thick and cut out rounds.
  5. Bake the Biscuits: Arrange the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
  6. Fry the Chicken: Heat oil in a pan over medium heat, season the chicken with salt and pepper, and fry until golden brown and cooked through.
  7. Add the Hot Honey: Drizzle hot honey sauce generously over each crispy piece of chicken just before serving.
  8. Assemble the Dish: Place the fried chicken between the halves of a biscuit and drizzle with extra hot honey if desired.

Notes

For a twist, add garlic powder or fresh rosemary to the biscuit dough. Serve with sides like crispy kale salad or cucumber salad.
