  • 1 cup All-Purpose Flour (or almond flour for gluten-free)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt (sea salt recommended)
  • 2 cups Baby Spinach (finely chopped; kale optional)
  • 1 cup Shredded Mozzarella Cheese (or feta for tangy flavor)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the cottage cheese, olive oil, and egg (or flaxseed mixture if making vegan) in a mixing bowl.
  3. Whisk together the flour, baking powder, and salt in a separate bowl until well blended.
  4. Gradually mix the dry ingredients into the wet ingredients, stirring until just combined.
  5. Fold in the finely chopped spinach and shredded mozzarella until evenly mixed.
  6. Scoop portions of the dough onto a parchment-lined baking sheet, shaping them into bagels with a hole in the center.
  7. Bake for 20-25 minutes, until they are golden and firm to the touch.
  8. Let the bagels cool slightly before serving.
