Keto Egg Bites are a delightful blend of flavors and textures packed into a convenient, bite-sized snack or meal. Perfect for busy mornings or meal prep.

  • 8 large eggs
  • ¼ cup milk
  • ½1 tsp salt
  • ½ tsp black pepper
  • ¼ cup white onion (finely diced)
  • ⅔ cup baby spinach (roughly chopped)
  • 4 strips bacon (cooked and crumbled)
  • ¼ cup shredded cheddar cheese
  • 2 links cooked chicken sausage (chopped into tiny pieces)
  • ½ cups white or baby bella mushrooms (diced)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup bell pepper (deseeded and chopped)
  • ¼ cup buffalo sauce
  • ¼ cup chopped green onions
  • 1 cup cooked or rotisserie chicken (chopped into small pieces)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a regular muffin tin with avocado oil or cooking spray.
  2. Whisk together the eggs, milk, salt, and pepper until well blended.
  3. Stir in your selected ingredients based on your preferred flavor variation.
  4. Divide the egg mixture evenly among the greased muffin cups. If you like, sprinkle extra cheese on top.
  5. Bake for 14 to 18 minutes until the egg bites are puffed and set in the middle.
  6. Allow to cool slightly before serving. Store any leftovers in an airtight container in the fridge.
