Keto Egg Cups

Delicious and versatile keto-friendly egg cups perfect for any meal, ready in under 30 minutes.

Ingredients

  • 6 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup cooked bacon or sausage (optional)
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or olive oil.
  2. Whisk the eggs thoroughly in a mixing bowl. Season with salt and pepper to taste.
  3. Stir in the diced bell peppers, onions, and optional cooked bacon or sausage until well combined.
  4. Pour the egg mixture into the greased muffin tin, filling each cup about two-thirds full.
  5. Sprinkle your favorite shredded cheese on top of each cup.
  6. Bake in the preheated oven for 15-20 minutes until the egg cups are set and the tops are golden brown.
  7. Allow to cool slightly before carefully removing from the muffin tin. Serve warm or store in the fridge for later.
