Lemon Baked Oats

Bright and zesty lemon baked oats that are fluffy, easy to make, and perfect for breakfast or brunch.

Ingredients

  • 1/2 cup oats
  • 1 egg
  • 1/3 cup milk
  • 1 tbsp sweetener (or sugar)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp baking powder
  • 2 tbsp Greek yogurt
  • 1 tbsp sweetener or sugar for glaze
  • 1 tbsp lemon juice for glaze

Instructions

  1. Begin by adding all the oats, egg, milk, sweetener, lemon juice, lemon zest, baking powder, and Greek yogurt into a blender.
  2. Blend the mixture for about 30 seconds or until you achieve a smooth consistency.
  3. Pour the blended mixture into a greased ramekin or a small baking dish.
  4. Place the dish into your air fryer basket and set it to cook at 175°C (350°F) for 8 to 10 minutes, or until fully cooked through.
  5. While the oats bake, prepare the glaze by mixing Greek yogurt, lemon juice, and sweetener in a small bowl.
  6. Once the baking process is complete, remove the dish from the air fryer and drizzle the warm oats with the lemon yogurt glaze. Serve immediately!

Notes

Serve with fresh berries or extra Greek yogurt for an added protein boost. Store leftovers in an airtight container in the fridge for up to three days.
