Loaded Breakfast Bowl

A hearty breakfast bowl with crispy potatoes, sautéed bell peppers, and eggs, customizable with your favorite toppings.

  • 2 eggs
  • 1 medium potato, diced
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, diced
  • Salt and pepper to taste
  • 1/4 cup cheese (optional)
  • 1 avocado, sliced (optional)
  • Salsa for serving (optional)

Instructions

  1. Start by heating a splash of oil in a skillet over medium heat.
  2. Add in the diced potatoes and sauté until they’re golden and tender, stirring occasionally.
  3. Toss in the diced onions and bell peppers, cooking until they’re softened and aromatic.
  4. While the veggies cook, scramble or fry your eggs in a separate pan according to your preference.
  5. Once everything is ready, combine the potatoes and sautéed vegetables in a bowl.
  6. Top your mixture with the cooked eggs and, if desired, cheese, avocado, and salsa.
  7. Season everything with salt and pepper to taste before enjoying.

Notes

Consider adding a dollop of sour cream, fresh herbs, or a squeeze of lime for extra flavor. Store leftovers separately for optimal freshness.
