Loaded Breakfast Skillet

A hearty breakfast dish combining potatoes, eggs, and your choice of meat and vegetables, perfect for busy weekends.

  • 2 potatoes, diced
  • 4 large eggs
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup cooked bacon or sausage, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat a generous drizzle of olive oil in a large skillet over medium heat.
  2. Add the diced potatoes. Cook them until they’re golden brown and fork-tender, about 10-15 minutes. Don’t forget to season with salt and pepper!
  3. Stir in the diced bell pepper and onion, sautéing until soft, which should take around 5 minutes.
  4. Mix in the chopped bacon or sausage, ensuring everything is well combined.
  5. Create small wells in the mixture and crack the eggs into these wells.
  6. Cover the skillet and let the eggs cook to your desired doneness.
  7. Once the eggs are set, sprinkle the shredded cheese over the top. Cover again to let the cheese melt.
  8. Finish with fresh herbs if desired, serve hot, and enjoy!

Notes

Keep potatoes from getting mushy by choosing waxy varieties. Adjust cooking time for eggs based on your preference.
