Make Ahead Breakfast Bowls

Quick and nutritious breakfast bowls that can be prepped in advance, perfect for busy mornings.

  • 6 eggs
  • 1 cup diced ham
  • 1 cup shredded cheese
  • 2 cups hash browns
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven according to the package instructions for the hash browns.
  2. Heat a drizzle of olive oil in a skillet over medium heat.
  3. Toss in your chopped onions and bell peppers. Sauté them until they’re tender and fragrant, about 5 minutes.
  4. Stir in the hash browns, cooking until they turn golden and crispy, typically 8-10 minutes.
  5. Meanwhile, whisk your eggs in a bowl, seasoning liberally with salt and pepper.
  6. In a separate pan, scramble the eggs until they are fluffy and cooked through.
  7. In a large bowl, mix together your crispy hash browns, fluffy scrambled eggs, diced ham, and cheese until well combined.
  8. Divide the mixture into meal prep containers and pop them in the fridge.
  9. When you’re ready to enjoy your meal, simply heat in the microwave and savor the deliciousness.

Notes

Store in airtight containers for up to 5 days in the fridge. Can be frozen for up to 3 months.
