Make-Ahead Breakfast Bake

A nutritious and delicious make-ahead breakfast combining eggs, veggies, and cheese, perfect for busy mornings or brunch.

  • 6 large eggs
  • 1 cup spinach, chopped
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cheddar cheese, shredded
  • 1 cup oats
  • 4 tortillas
  • 1/2 cup milk or milk alternative

Instructions

  1. Preheat your oven to 350°F (175°C) if you’re planning to bake.
  2. Chop the spinach, bell peppers, and zucchini into bite-sized pieces. Beat the eggs in a large bowl.
  3. Combine all your ingredients in the bowl—veggies, eggs, cheese, and oats.
  4. Pour the mixture into your baking dishes or generously fill your tortillas.
  5. Place the dishes in the oven and let them cook until set. If you’re prepping for the next day, simply cover and refrigerate overnight.
  6. Once baked, let it cool a bit before placing in storage containers.

Notes

For added flavors, sauté the vegetables first and experiment with different spices.
