Make-Ahead Freezer Breakfast Burritos

Delicious and convenient make-ahead breakfast burritos filled with scrambled eggs, bacon, seasoned potatoes, and cheese.

  • 8 large eggs
  • 1 cup diced cooked bacon
  • 2 cups seasoned diced potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 8 large flour tortillas
  • Salt and pepper to taste

Instructions

  1. In a large bowl, crack the eggs and whisk well; season with salt and pepper.
  2. Heat a skillet over medium heat; scramble the eggs until fully cooked, then remove from heat.
  3. In another skillet, cook the diced bacon until crispy. Add the seasoned potatoes and cook until golden brown.
  4. Lay out the tortillas on a clean surface.
  5. In the center of each tortilla, place a portion of scrambled eggs, bacon, seasoned potatoes, and cheese.
  6. Fold the sides of the tortilla inwards and roll tightly to enclose the filling.
  7. Wrap each burrito in plastic wrap or foil, then place them in a freezer-safe bag to freeze for up to 3 months.
  8. To reheat, unwrap and microwave for 1-2 minutes until heated through.
