Maple Bacon Pancake Muffins

A delightful fusion of pancakes and bacon, these muffins are perfect for brunch or a cozy breakfast at home.

  • 1 cup pancake mix
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup maple syrup
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped pecans (optional)
  • 1/2 teaspoon vanilla extract
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
  2. Combine pancake mix, milk, egg, maple syrup, and vanilla extract in a large mixing bowl. Stir until just combined.
  3. Fold in the cooked and crumbled bacon, and optional pecans.
  4. Spoon the batter evenly into the muffin cups, filling each about two-thirds full.
  5. Bake for 15-20 minutes until a toothpick comes out clean.
  6. Let the muffins cool slightly in the pan before removing them.

Notes

For added sweetness, drizzle extra maple syrup or honey on top. These muffins can also be paired with whipped cream or fresh fruit.
