Hash Brown Breakfast Casserole

A comforting breakfast casserole with crispy hash browns, cheese, and savory sausage.

  • 1 package (about 24 oz) frozen hash browns, thawed
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 cup cooked breakfast sausage or bacon pieces
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons butter for greasing the pan

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the thawed hash browns until evenly combined.
  3. In a separate bowl, whisk the eggs and milk together until frothy.
  4. Incorporate the cooked sausage or bacon, onion, bell pepper, salt, black pepper, and garlic powder into the hash browns. Pour your egg mixture over this blend.
  5. Transfer everything into a greased baking dish, spreading it out evenly.
  6. Sprinkle additional cheese on top.
  7. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
  8. Let it cool slightly before serving. Enjoy!

Notes

This casserole can be made ahead of time. Assemble it the night before and bake it in the morning. Leftovers can be stored in the refrigerator for up to 3-4 days.
