Meal Prep Breakfast Eggs

A nutritious and easy-to-make breakfast with colorful vegetables, perfect for busy mornings or meal prep.

  • 1/4 cup milk
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup spinach
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs and milk until fully combined.
  3. Stir in the diced bell peppers, onions, and spinach. Season with salt and pepper.
  4. Fold in the shredded cheese if using.
  5. Evenly pour the egg mixture into greased muffin tins or a baking dish.
  6. Bake in the oven for 20-25 minutes, or until the eggs are set and lightly golden on top.
  7. Remove from the oven and let cool before transferring to the refrigerator.

Notes
