  • 1/4 cup feta cheese, crumbled
  • 1 medium tomato, diced
  • 1 cup fresh spinach, chopped
  • Salt and pepper to taste
  • 2 slices of whole grain bread or a bagel
  • Olive oil for cooking

Instructions

  1. Heat a small amount of olive oil in a skillet over medium heat.
  2. Whisk the eggs in a bowl, adding a pinch of salt and pepper.
  3. Pour the egg mixture into the skillet once the oil is ready. Scramble them until they reach your desired doneness.
