Mountain Man Crock Pot Breakfast

A hearty, filling breakfast made in a crock pot, perfect for busy mornings or lazy weekends.

  • 12 eggs
  • 1 pound sausage
  • 2 cups shredded cheese
  • 4 cups frozen hashbrowns
  • Salt and pepper to taste
  • Chopped green onions (optional)

Instructions

  1. Cook the sausage in a large skillet over medium heat until browned. Drain excess fat.
  2. Whisk together the eggs in a separate bowl. Season with salt and pepper.
  3. Grease your crock pot to prevent sticking.
  4. Layer the frozen hashbrowns in the bottom, followed by the cooked sausage and then the shredded cheese.
  5. Pour the egg mixture evenly over the layers in the crock pot.
  6. Cover and cook on low for 6-8 hours, checking to ensure the eggs are set and fluffy.
  7. Serve hot, garnished with chopped green onions if desired.

Notes

You can swap regular sausage for turkey or vegetarian sausage for a lighter option.
