Mushroom Spinach Scrambled Eggs

A delightful and quick dish featuring scrambled eggs with sautéed mushrooms and fresh spinach.

  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Add sliced mushrooms and sauté for about 3-4 minutes until softened.
  3. Introduce fresh spinach to the skillet and cook until wilted, roughly 2-3 minutes.
  4. In a bowl, beat the fresh eggs, seasoning them with salt and pepper.
  5. Pour the seasoned eggs into the skillet with the mushrooms and spinach.
  6. Stir gently until the eggs are fluffy and cooked through, usually about 3-5 minutes. Serve immediately.
