No-Bake Healthy Breakfast Cookies

Delicious, nutritious cookies made with oats, peanut butter, and chocolate, perfect for breakfast or a quick snack.

Ingredients

  • 1 cup oats
  • 2/3 cup peanut butter
  • 1 1/2 Tbsp honey
  • 2 Tbsp shredded coconut
  • 1/4 cup chopped walnuts
  • 1 Tbsp sunflower seeds
  • 2 Tbsp chopped chocolate
  • 1/2 tsp coconut oil

Instructions

  1. Combine the peanut butter and honey in a bowl. Stir until smooth.
  2. Add the oats, chopped walnuts, sunflower seeds, and shredded coconut. Mix everything together until well combined.
  3. Take about 1 1/2 tablespoons of the mixture and roll it into small cookies or patties using your hands.
  4. Melt the chocolate with coconut oil in a microwave-safe bowl in 15-30 second intervals, stirring until smooth.
  5. Drizzle the melted chocolate over the cookies in a zigzag pattern.
  6. Place the cookies in the refrigerator for at least 1 hour until they are set.

Notes

Store in an airtight container in the fridge for up to 4-5 days, or freeze for up to a month.
