  • 1 Avocado
  • 2 slices Whole-grain bread
  • 1 cup Fresh spinach
  • 1/4 cup Cheese (your choice)
  • 1 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs or spices (optional)

Instructions

  1. Heat a skillet over medium heat and add a splash of olive oil.
  2. Crack the eggs into the skillet. Season with salt and pepper, then scramble for about 3-5 minutes until fluffy.
  3. Toast the whole-grain bread to your desired crispness.
  4. Wilt the fresh spinach in a separate pan for a minute or two until tender.
  5. Assemble your dish by spreading avocado on the toast, topping it with scrambled eggs, wilted spinach, and cheese.
