Oven Baked Starbucks Egg Bites

Delicious and protein-packed egg bites inspired by Starbucks, easy to make and perfect for breakfast or snacks.

Ingredients

  • 9 large eggs
  • 1 and 1/2 cups cottage cheese
  • 1 tsp salt
  • 6 strips cooked bacon
  • 2/3 cup shredded gruyere cheese

Instructions

  1. Preheat your oven to 350°F and spray a 12-slot muffin tin with cooking spray.
  2. Combine the eggs, cottage cheese, and salt in a blender. Blend until smooth and creamy.
  3. Chop each strip of cooked bacon into quarters, then place half a strip in each muffin slot.
  4. Spoon the shredded gruyere cheese over the bacon in each slot.
  5. Pour the egg and cottage cheese mixture into each muffin cup, filling nearly to the top.
  6. Place a baking sheet on the bottom rack of the oven and pour boiling water onto it to create a steam bath.
  7. Bake in the oven for about 25 minutes until set.
  8. Cool the muffin tin before gently removing the egg bites. Enjoy!

Notes

For variations, consider swapping the gruyere cheese for cheddar or feta, and add veggies like spinach or bell peppers. Store in an airtight container for up to five days.
