Overnight Baked Banana French Toast Casserole

A delightful breakfast dish featuring layers of flavor and the comforting sweetness of ripe bananas, perfect for brunch or gatherings.

  • 1 lb loaf Sourdough or French Bread, cut into chunks
  • 8 large eggs
  • 2 cups milk (whole or 2%)
  • 1/2 cup heavy whipping cream
  • 1/2 cup sugar
  • 1/4 cup light brown sugar, unpacked
  • 2 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 6-7 medium-sized bananas, chopped
  • 3/4 cup all-purpose flour
  • 3/4 cup firmly packed brown sugar
  • 1 tsp cinnamon
  • 1/2 cup salted butter, cut into pieces

Instructions

  1. Preheat your oven to 350°F (176°C) and grease a 9×13 inch casserole dish.
  2. Combine the bread chunks in a large bowl and set them aside.
  3. Whisk together the eggs, milk, cream, both sugars, vanilla extract, and cinnamon until well blended in another bowl.
  4. Pour the egg mixture over the bread chunks and add the chopped bananas, carefully stirring to combine.
  5. Transfer the mixture into your prepared casserole dish, spreading it out evenly. Cover with plastic wrap and refrigerate overnight.
  6. Bake the casserole for about 35-40 minutes the next morning, or until it reaches your preferred level of doneness.
  7. Prepare the streusel topping by mixing the flour, brown sugar, and cinnamon in a bowl, then add the butter and mash until crumbly.
  8. Sprinkle the streusel topping over the casserole when it’s nearly done.
  9. Return it to the oven and bake for another 5 minutes, until the streusel is melted and golden brown.
  10. Serve warm, drizzled with syrup.

Notes

Use slightly stale bread for best results. Overripe bananas enhance sweetness.
