Pancake Casserole

A fluffy, berry-studded casserole that transforms pancakes into a delightful brunch experience, perfect for lazy weekends or special occasions.

  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 2 eggs
  • 1 cup mixed berries (such as blueberries, strawberries, and raspberries)
  • 1 cup yogurt (plain or flavored)
  • Maple syrup for serving
  • Butter for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a baking dish with butter.
  2. Combine pancake mix, milk, and eggs in a large bowl. Whisk until the mixture is smooth.
  3. Pour half of the batter into the greased baking dish, spreading it evenly across the base.
  4. Sprinkle mixed berries over the batter, making sure they’re well distributed.
  5. Spoon dollops of yogurt on top of the berries.
  6. Pour the remaining batter over the yogurt and berries, ensuring everything is well-covered.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  8. Let it cool slightly before serving warm, drizzled with maple syrup.

Notes

For extra fluffiness, let the batter rest for a few minutes before pouring it into the baking dish. You can swap the berries based on availability and season.
